Potato soup is an easy to prepare food that can be enjoyed especially on a cold winter day. This soup is rich, creamy, and satisfying,

Ingredients:
- 1 large onion
- 1 celery stick
- garlic
- 1tbsp flour
- carrots
- potatoes
- ½ bunch of parsley
- bay leaves & desired spices (salt, paprika, black pepper)
- 3.5L veggie broth (soy-free)
- 300g sour cream (vegan)
Onion on the side:
- ½ white onion
- 1tbsp vinegar
- 1tbsp olive oil
Add ons:
- chili flakes
- parmesan cheese
- toast
My substitutes:
- gluten free flour (made with brown rice flour, tapioca starch, arrowroot starch, sorghum flour and xanthan gum) & gluten-free bread for the toast
- sodium & soy-free vegetable broth
- vegan sour cream & vegan parmesan chees
Instruction:
Grind 1 large onion & 1 celery stick in a food processor and add it to a pot
with heated oil

Cook for few minutes then
add a few garlic pieces

Sprinkle 1 tbsp of flour

Add uncooked carrots & potatoes,
bay leaves & spices

add ½ bunch of parsley

pour 3.5L veggie broth over it

cook under cover for about
half an hour on low medium

Once soup is done turn off the stove and take 300g of sour cream in a bowl, add some hot liquid from the soup and whisk it until smooth

then pour it into the soup.

To make the onion as a side you’ll need half of a white onion cut up into small pieces with a knife

wrap it in a kitchen towel hit it from all angles with your knuckles then squeeze the juice out

put the onion in a bowl and add 1tbsp vinegar + 1tbsp olive oil
