Ingredients:
- quinoa
- arugula
- any fruits (I use mangos)
- green onion
- roasted sweet peppers
- all natural fig balsamic dressing
- chickpeas
- beans
- corn
Other add ons:
- mushrooms
- feta
- cucumbers
- olives
- tomatoes
- avocados
- hemp seeds
Cook the quinoa and boil the chickpeas, beans & corns. ➯ Then simply assemble all the ingredients on a plate.
I use green onion, roasted sweet red peppers, pine nuts, arugula, mangos and all natural fig balsamic dressing.
