Vegetable casserole is a dish that typically includes a combination of vegetables and a creamy or cheesy sauce, baked in the oven until golden.
The specific vegetables used can vary depending on personal preference, but some common options include:

Ingredients:

  • Brown rice
  • Carrots
  • Beans
  • Broccoli
  • Cauliflower
  • Brussel sprouts
  • Mushrooms
  • Onions
  • Parsley (chopped)

For creamy sauce:

  • 2 eggs
  • ½ cup mayo (vegan)
  • ½ cup sour cream (vegan)
  • Shredded cheese (vegan)

Instruction:

Cook rice in a rice cooker &
add desired spices

Heat oil in a pot and cook
onions & mushrooms

Make the creamy sauce by combining
the eggs, mayo & sour cream

Mix the cooked rice along with the fried onion and mushrooms into the sauce

Mix in the chopped fresh parsley

Boil the veggies first then
add them to a casserole

Pour some egg whites over the vegetables then top it up with shredded cheese

Evenly spread the rice over top of the vegetables and bake it until golden
