These walnut cookies are so soft they almost melt in your mouth.
Chewy texture with a rich, nutty flavor. Here is a healthy recipe for walnut cookies:
- 6 eggs
- 1 tbsp lemon juice
- 350g coconut sugar
- 180g chopped walnuts
- 6 tbsp powdered stevia
- 2 tbsp cocoa powder
- 250g unsalted butter, softened (vegan)
These are all your ingredients.
First, separate the yolk from the whites.
Heat a small amount of water in a deep pot and place an empty bowl on top.
Pour the egg whites into this bowl.
Whisk the egg whites until
it foams up then pour the
lemon juice into the bowl.
Slowly add the coconut sugar
while keep whisking.
Use an electric mixer so it foams up more
Fold in the walnuts.
Take a baking tray with a small size cupcake mold and fill them up. Bake it for an hour (80C/175F) leaving the oven door 5cm ajar to dry them out.
For the cream (middle part) heat a small amount of water in a deep pot and place an empty bowl on top. Pour in the yolk.
Add powdered stevia into yolk.
Add cocoa powder into yolk.
Add the butter into the mixture.
Once fully cooled take 2 cookies and
stick it together with the cream.
